Yaegaki has been on the scene since 1666, producing a number of sakes in Hyogo, the heartland of Japanese sake production. This unctuous junmai is brewed with rice that has had at least 35 to 37 percent of its original weight carefully polished away. This leaves the resulting brew with enticing aromas and a lengthy silken finish. The Kurobin also happens to be a tremendous bargain, highly recommended for those looking to have plenty of tasty sake on hand for festive sushi gorges. Enjoy slightly chilled or mildly warmed. |
