This Hiroshima-based brewery is considered one of the pioneers of premium sake, having been among the first to produce special Ginjo and Daiginjo bottlings in the early- and mid- 20th century. This luxurious Daiginjo is certainly one of the most nuanced sakes we've tasted, and it shines with salmon sashimi or lightly salted edamame. Subtle aromas of green melon and anise lead to soft, fresh water flavors and a long finish with the vaguest impression of sweetness. Since the brewery considers this one of their best sakes, each bottle comes with a pair of microscopic gold-leaf flower blossoms that can be seen swirling in the prized liquid.
