While Albariño continues to command the most attention as Spain's most important grape variety for quality white wine, serious refreshers such as this beauty, crafted with 100 percent Godello, have managed to capture some of the spotlight. The Godello grape was nearly extinct when the Godeval proprietors rediscovered the variety in their vineyards and started producing the wine from a restored Galician monastery in 1986. Godeval is vinified without the use of oak and combines the minerality of Pouilly-Fumé with the body of white Burgundy for a wine that pairs effortlessly with everything from seafood to salads—little wonder it's the house pour at so many NYC eateries.
