Faiveley's Passetoutgrains (Passe-Tout-Grains) is mostly comprised of Gamay, with Pinot Noir playing a supporting role, and offers a brighter contrast to the supple Bourgogne rouge. Emphasizing red fruit and herb aromas and flavors over the deeper vibes of the Bourgogne rouge, this wine is best enjoyed just below room temperature with rustic fare like fresh garden salads, cold roast chicken, grilled lamb chops, crispy chicken thighs, whole-roasted freshwater fish, crispy potatoes, and pulled pork sandwiches.
