One of my very favorite non-vintage Champagnes, this Pinot-dominated blend with a muscular structure and a delicate attack dances on the palate with complex, subtle notes of quince, tart apple, and green pear accompanied by toasty hazelnut informing you of Mme. Lily Bollinger's quote: "I drink my champagne when I am happy and when I'm sad. Sometimes I drink it when I am alone. When I have company I consider it obligatory. I trifle with it when I'm not hungry and drink it when I am. Otherwise I never touch it—unless I'm thirsty."
