When we set out to find a solid Chablis that wouldn't cost a fortune, something great for everyday enjoyment, it was hard for us to think of anything else but Domaine William Fevre. Considered by enthusiasts to be one of the region's top three producers, along with Vincent Dauvissat and Raveneau, Fevre's grand cru bottlings are among the most complex (and sanely priced) white Burgundies money can buy. The Champs Royaux is a special cuvée Fevre vigneron Didier Seguier crafts with select lots of purchased fruit. New York Times writer Eric Asimov extolled the virtues of the 2007 bottling's "lemon, honey, and herb" notes "and mineral flavors," all prized qualities among Chablis lovers. Enjoy this lip-smacking wine mid-week with simple pastas or fish dishes, or try wowing guests by serving it alongside baked goat cheese tarts and herb-rubbed trout filets at your next dinner party.
