IWA 5 sake is back with another installment of its popular Assemblage series. The third edition features the same signature white pepper nose as the previous two, this time leading to a racy, silky mouthfeel that comes across youthful and energetic.
"We have launched IWA a super-premium Sake (Junmai Daiginjo) created by Richard Geoffroy after he retired from being Dom Perignon's chef de cave for 28 years. Through this experimental project, Richard's vision was to create a sake that could pair with many types of cuisine – not just Japanese. To achieve the required level of balance and complexity, and true to his Champagne origins, he created a sake that is an assemblage of (3) rice varieties, from (4) terroirs and (5) yeast strains, and using reserve sake from previous years. This is a pioneering and innovative method with a quite spectacular outcome; as IWA showcases a unique combination of the sweet, the bitter, the sour, the spicy and the umami. Not to mention a wonderful texture and a wide array of aromas and flavors."
