Ayuuk's distinct identity is built around the Pasilla Mixe chili as its sole botanical. This deeply aromatic chili is carefully macerated in a unique spirit base, distilled from Danish heritage purple wheat and pilsner malt, providing an intriguing canvas of flavor. After distillation, the finest portions are rested in seasoned Oloroso sherry casks. After distillation the best fractions are rested in a sherry Oloroso cask, allowing the flavors to infuse and mature with each other, giving a smooth, distinct and savory finish.
