From their Westfield, NY facility—New York State's pioneering combination winery, distillery, and brewery—Five & 20 Spirits champions a dedicated grain-to-glass philosophy, sourcing local New York grains for their distinctive spirits.
This thoughtfully crafted bourbon begins with a mash bill of 70% New York corn, 15% New York rye, and 15% barley malt. It first matures for a minimum of two years in new, charred American oak barrels, developing a robust foundation of classic caramel and vanilla notes that complement the bourbon's inherent sweetness. The true ingenuity, however, is revealed in its finishing period: an additional 16 months spent in freshly emptied red wine casks sourced directly from Five & 20's own on-site Mazza Chautauqua Cellars winery. These particular casks previously held Regent, a red grape variety known for its rich, fruity character without imparting excessive tannins. By filling these casks with whiskey within 24 hours of the wine's removal, maximum freshness and optimal flavor transfer are ensured.
The result is an inviting and complex bourbon, bottled at a robust 99 proof (49.5% ABV). The sweet corn, caramel, and vanilla notes from the initial aging are seamlessly complemented by luscious red fruit layers and subtle wine-like nuances derived from the Regent cask finish, creating a harmonious and memorable spirit.
