The production embraces time-honored traditions, including a proprietary four-day roasting process expertly designed to yield a remarkably smooth and well-balanced profile with less overwhelming smoke. The roasted agave pinas are then crushed with a traditional horse-drawn stone wheel (tahona), naturally fermented with wild airborne yeasts in pine barrels, and meticulously double-distilled in classic copper stills.
