Mezcalum Espadin & Cuishe is an artfully crafted Joven mezcal that offers an approachable yet deeply authentic taste of Oaxaca, reflecting generations of family tradition. This exceptional spirit is produced by the award-winning Maestro Mezcalero Carlos Mendez Blas at his family's historic palenque in Santiago de Matatlán, a distillery first established in 1930 and built upon four generations of mezcal-making wisdom.
This harmonious mezcal is a meticulous blend, primarily composed of 95% cultivated Espadin agave grown on the hillsides of Santiago de Matatlán, thoughtfully complemented by 5% wild Cuishe agave sourced from the high, arid valleys of Oaxaca. Both agave types undergo the traditional "capón" method before harvest—where the flowering stalk is cut to concentrate sugars and flavors in the agave heart (piña). These mature piñas are then roasted for five days in a traditional stone-ground oven using locally-sourced firewood, crushed by a massive stone tahona wheel, and naturally fermented in open-air wooden barrels with ambient wild yeasts. The final spirit is achieved through double distillation in copper pot stills.
The result is a remarkably smooth and inviting mezcal, intentionally light on the smoke to allow the true agave character to shine. Delicate wildflower notes greet the nose, while the palate unfolds with layers of bright citrus zest, crisp green pepper, nuances of sun-dried leather, and sweet candied pine, all touched by a distinct minerality and a hint of sea salt. It culminates in a gentle, sweet finish reminiscent of caramelized vanilla and creamy raw honey. At 44% ABV, this additive-free, sugar-free, non-GMO, and vegan mezcal is a true celebration of Oaxacan heritage and artisanal craftsmanship.
