Wild Common Anejo Tequila Batch 1 is a remarkable and category-defining Anejo that beautifully embodies a mission to honor tradition, community, and the land. This exceptional spirit is the result of a thoughtful partnership between founder Andy Bardon and the esteemed Rosales family at the historic Tequila Cascahuin distillery (NOM 1123) in Jalisco, Mexico, where distilling traditions date back to 1904.
This artisanal tequila is meticulously crafted using time-honored, heritage techniques. The agave hearts are slowly roasted for 72 hours in small brick ovens to develop deep sweetness. Extraction is achieved using a combination of a traditional stone tahona and a roller mill, and fermentation occurs naturally, with agave fibers included in the process to enhance complexity. The spirit is then twice distilled in small stainless and copper pot stills under the watchful eye of Master Distiller Salvador "Chava" Rosales Trejo, before maturing for a full 12 months in ex-bourbon barrels.
This painstaking process yields a sophisticated tequila at 94 proof (47% ABV) with a luminous straw color and thick, viscous legs that cling to the glass. Expect a captivating bouquet of delicate florals, raw honey, fresh tarragon, and a subtle warmth of cinnamon. The palate delivers a masterful harmony of sweet cooked agave, golden raisins, warm spices, candied ginger, and luscious dates, all evolving beautifully as the spirit opens in the glass.
