Sourced from a 30-year-old, organically farmed granitic vineyard nestled on a slope near the Tâmega River in Amarante, this wine is a profound example of the Bojo do Luar project's "monastic winemaking" philosophy, which champions minimal intervention and revives ancient techniques.
Crafted with exceptional dedication, the hand-harvested grapes (90% destemmed) commence their transformation with a spontaneous, indigenous yeast fermentation in traditional 1,200-liter 'talhas' (clay amphoras), uniquely without any temperature control. A key element of this ancient-inspired method is the addition of finely ground chestnut flower to the grapes at the start, acting as a natural stabilizer. The defining characteristic of this Vinho Branco is its extended nine-month skin-contact maceration within these sealed talhas, a patient process that develops remarkable texture, depth, and complexity. It is then bottled unfined and unfiltered, with only a minimal touch of SO2 (25mg/L) added at bottling.
