Les Jardins Philosophiques Pacherenc du Vic-Bilh, often associated with Château Bouscassé's beautiful gardens and known as the "Jardins" cuvée, is a compelling tribute to Petit Courbu, celebrated by visionary winemaker Alain Brumont as the great dry white wine grape of Southwest France. Brumont boldly champions this smooth, silky, and often underestimated variety, crafting a wine that brilliantly demonstrates its full, expressive potential from the Pacherenc du Vic-Bilh appellation.
Cultivated on clay-limestone soils, the grapes, predominantly Petit Courbu with a touch of Petit Manseng from approximately 15-year-old vines, are handled with meticulous care. A very slow pressing is followed by cool fermentation in vats (16-18°C) to preserve delicate aromatics. The wine then matures for 10 to 12 months on its fine lees in vats, with regular stirring to enhance texture and complexity, all without the influence of oak barrels.
This process yields a wine of remarkable finesse, freshness, and vivacity. It delights the senses with a bouquet reminiscent of fragrant Gascon meadows, brimming with aromas of exotic fruit and delicate wildflowers. The palate is both lively and caressing, showcasing a subtle mineral undercurrent and generous fruit, all wrapped in a full-bodied yet smooth texture.
